Waldorf veg salad

500 GM red apples, diced
3tbsp fresh lemon juice
150 ml mayonnaise
1 head celery
4 shallots (spring onion or small onion)
1 garlic clove, crushed
90 GM walnuts, chopped
500 GM paneer or cottage cheese, cubed
1cos lattuce
Chopped walnuts, to garnishMethod :
Place the apples in a bowl with the lemon juice and 1tbsp of mayonnaise . Leave for 40 min
Slice the celery very thinly. Add the celery with the shallots or onions, garlic and walnuts to the apple, mix and then add the remaining mayonnaise and blend thoroughly.
Add the cottage cheese and mix with the other ingredients.
Line a serving dish with the lettuce. Pile the salad into a serving bowl, sprinkle with pepper and garnish with the chopped walnuts.
